My favorite would be NewPipe - it always works when I need it too, the developers are great at fixing bugs, and overall I feel like it provides a better experiemce than the default YouTube app.
I also use Bromite quite a lot because it’s better for simple web browsing than any other I could find.
Not OP, but I personally use FreeTube. The design is not perfect, but you can add subscriptions and separate them between multiple accounts (those are all local), change themes and it even has support for SponsorBlock. If you prefer web apps, there’s Invidious.

Invidious is my standard choice because it works well and is lightweight, but sometimes I use Piped when Invidious bugs out (which is quite rarely).
