Daily backup to backblaze b2 and also to local storage with kopia. Its been running for a year I think, no issues at all. I didnt need a real backup yet, just did some restore tests so far
If OP cant use more than one disk at once, how can they benefit from mergerfs?

My server is diy desktop pc - mbo MSI Z270-A PRO with celeron G3930 and 16GB RAM, 3x SSD on 550W PSU, idles at 23W. After adding another 3.5" HDD consuption went up to 34W. 34W in Ctoatia is around 34€ a year.
Some SFF PCs are at 10-15W. SBCs like rpi should be below 10 W, but dont think you can get anything new for 80€
Your cpu supports quick sync so I bet you are good without gpu. Try it yourself before buying one, you also drain less power
Im not afraid of command line, but also dont feel like linux guy yet. The thing is that installing and using some distros are way easier than windows. I installed POP OS recently and cant believe how smooth and easy it was. Average windows users might not need command line at all on distro like that
Im interested what people recommend. If you dont find any, what about just printing to another pdf file? Wouldnt that remove attachments?

I ended up downloading new version and then installed 2016 by following guide from new one. It uses different activation method which is allowed, so no need to hide VM.

First of all, I own a SW2016 license and that’s why I’m trying to install the same version on another PC. I’m willing to switch version if needed, cant go back to dual boot windows anymore :D Some people obviously successfully masked virtualization. There are examples, but I couldn’t figure out myself:

I was hoping I just need to modify my virtualbox on linux, but seems like its much more complex. I’m still reading and doing my best, but I’m not even sure are guides made for host OS or guest OS

Im running all of that and even more on DIY PC (intel g3930, 8GB ram and no gpu). Quick sync makes it perfect for media server, but other than that its overkill. Raspberry pi 4 can run all of that as well, but it cant transcode, so only direct play. I don’t recommend rpi, just wanted to point out how powerful components you need. Keep in mind I’m still new in selfhosting, but I went for Debian, running OMV and pihole bare metal, then everything else in docker containers. I’m managing containers with portainer (also docker container). Spent loads of time learning and building it, but its deffo worth it.
One of the first services on my server was nextcloud in docker container from lsio. Never had problems so there was no need to try AIO, but so many people recommend that, it will be my next setup if this one fails me
